Introducing Executive Chef, Dustin Setso:
Executive Chef, Dustin Setso has always loved a challenge, especially in the kitchen. Growing up on the West Coast of Vancouver Island, meant there was always an abundance of fresh food including a fresh supply of wild salmon every summer, much of it Dustin caught himself while out fishing. In a culinary capacity, Dustin lived and worked in Calgary, Canmore, Saskatoon, Kamloops and onboard Holland America Cruise Lines before returning back to Vancouver Island, which he has always called home. Dustin has been the Executive Chef at the Harbour Towers since the fall of 2012.
In 2013, Dustin completed his Certified Chef de Cuisine (CCC) and has always pushed himself to further his education to keep himself up on current trends and cooking methods. The CCC professional designation is the highest rung in the career ladder for cooks in Canada. It represents an acknowledgment of skills and experience through participation in a training program.
Dustin is always positive in his endeavours and looks forward to a new challenge for himself and his team, all of whom are very accommodating to their clientele, always catering to diners' special dietary needs or preferences, whether it means adding or removing a specific item from the recipe to ensure the diner's needs and wants are taken care of. "I feel being a chef is a profession and you should be proud of what you do," he said, stating it's something he instills in himself and his team, all of whom take pride in their work, which shows in the professional manner they do it. He looks forward to making your next dining experience a memorable one!
